This medium-high fruity olive oil is produced by the pioneering "Ecológica La Olivilla" cooperative a small group of 8 farmers committed to not only to making high-quality oil but also to restoring their local environment. Located in Sierra de Cazorla, Jaén, "Ecológica La Olivilla" is a pioneer in preserving the olive grove ecosystem—not only its vegetation cover but also the native flora and fauna. They care for the ecosystem by reintroducing native plant species and improving habitats for local insects, reptiles, and birds like kestrels, little owls, and barn owls, in collaboration with SEO-BirdLife. Since late 2019, they have also supported the “Olivares Vivos” (Living Olive Groves) initiative, promoting biodiversity and restoring environmental richness through a holistic farming model.

Process: This premium extra virgin olive oil is made from olives milled within a few hours of being picked. As per best practice, the olives are milled mechanically and temperatures never go above 27 degrees. No chemicals are used at any stage of the process.
